Pumpkin Pie Disaster



It is one of the EASIEST things to bake.

So, I feel especially lame to admit I messed up the pumpkin pie--not once, but TWICE--for my son's kindergarten class's Thanksgiving feast.

Yesterday, I baked the pie according to the ultra easy to follow directions on the back of the Libby label. After the 50 minutes were up I noticed the pie in the middle still looked uncooked so I set the timer for another 10 minutes. But even after cooking it for the final 10 minutes I knew something was horribly wrong; the pie resembled jello more than pumpkin pie--still mushy. Guess I had overloaded the too small pie tin with too much pumpkin pie mixture.

So, today I decide to bake another. Even easier, I used the Libby's EASY PUMPKIN PIE mixture. You just dump the can in the crust, add a few eggs with some evaporated milk. Fail-proof, right?

But, turns out I failed to reduce to the temperature from 425 to 350 degrees after the first 15 minutes (thought I had done so but apparently didn't hit the set button).

The result was a burnt pie crust--mostly on the outer edges.

And the party begins in 20 minutes.

Ugh. Think I'll just quickly drop off the pie in S's class and then hide hoping no one saw it was me who baked this horror.
